Meet Your Dietitian
Lela Fauze | MS, RDN, LDN
Meet Northwestern University's campus dietitian, Lela Fausze. She has a Master of Science degree in nutrition from the University of Illinois at Chicago. In addition to campus services, Lela has experience providing individualized counseling in an outpatient setting, and providing group counseling in community settings while serving low-income families around Chicago. Prior to changing careers to pursue education in nutrition, she lost over 100 pounds by implementing a healthy eating and exercise routine. Her personal transformation translates into a true passion for helping other develop a healthy relationship with food.
Lela is dedicated to customizing her services to guide all of her clients through whatever challenges they may experience while working to achieve a healthier lifestyle through nutrition. To assist with her duties, she is also ServSafe and ServSafe Allergens certified.
At Northwestern University, you have complimentary access to our Registered Dietitian Lela for nutrition consultations. Lela provides individual consultations to students for issues such as, but not limited to, the following:
- Healthy Eating
- Weight Management
- Nutrition and Fitness
- Vegetarian and Vegan Nutrition
- Eating Disorders and Disordered Eating
Lela's background includes experience in school food service management and federal nutrition program oversight. The dining team works to create healthy food options across campus and is available to assist students in making sustainable changes to their diet that fit their lifestyle. Food Allergies and Diet Needs
We take pride in serving you wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus and nutrition calculator. From our general manager to our front line servers, we work carefully to address food allergies, celiac diets, or other special dietary needs.
We want to meet one-on-one with anyone who has individual dining needs to ensure that your dining experience is safe, delicious, and social. If you have a food allergy/special diet concern, please reach out via email or by calling 847.491.3438. If you have a food allergy or intolerance, it is important to learn about the options available to you while dining on campus. Our staff can provide several options to accommodate your food allergy or intolerance needs.
We offer vegetarian and vegan options at every meal. A Kosher kitchen is located in Allison Dining Hall. Halal items are available upon request at all dining halls.
Students with special dietary needs are expected to communicate their dietary restrictions and requirements to the Dining Team by emailing email@example.com.

Mindful is Sodexo's health & wellness approach that helps you make healthy choices second nature! We are committed to creating healthy environments for our customers. Central to this effort is providing healthy, nutritious foods. The result of this initiative is an approach that focuses on transparency of ingredients, delicious food, satisfying portions and clarity in message so that you can make Mindful choices!
Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10 % of calories as saturated fat, and is restricted in sodium, and cholesterol. Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.
A variety of gluten-free items across campus and can accommodate customers with foods that are free from gluten-containing ingredients and protected against cross-contact with gluten.
Menu items with the vegetarian icon contain no meat, fish or poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products.
Vegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey.
