Elder Hall’s My Kitchen station at Northwestern University in Evanston, Ill., offers a daily rotating ingredient bar with items such as stir-fry, pasta, paella, Indian curry, Asian noodles, quesadillas and risotto. Students choose their ingredients and then prepare them at induction burners, with the unit’s executive chef providing cooking tips along the way. Click here to read the full article.

Locally grown produce not only ensures fresh, great tasting, and nutritious food, it supports the local communities, including local farmers and artisan producers. Reducing Waste at Northwestern Dining

In the month of February, Northwestern Dining started a push to encourage students to use reusable cups in the Dining Halls rather than disposable to-go cups. This initiative is part of a broader effort to reduce waste from dining facilities on campus. Northwestern Dining also composts food scraps in dining halls, works to educate students on how they can cut back on waste and donates extra food to Campus Kitchens. XOXO to Sodexo – For Taking a Stand for Millions of Hens

Today, with Sodexo, we are announcing that the giant food service company has committed, over the next five years, to switch all 20 million pounds of its liquid eggs to cage-free. The company manages dining operations at thousands of colleges, universities, hospitals, and corporate dining centers across the country. Due to its enormous size, this will remove 750,000 hens from battery cages per year and put them into cage-free settings. This announcement comes after prior announcements from the company to switch to cage-free for its 39 million shell eggs – which provides a better living for an additional 150,000 birds.
